Rolled leg of Sussex lamb infused with zataar, garlic & preserved lemon served on a warm potato, wild garlic & spinach salad with broad bean salsa verde dressed with red amaranth & wild chive flowers

South coast sea bass fillets pan fried & served on sautéed new potatoes with samphire & a lemon & brown shrimp champagne sauce dressed with pea shoots & cornflowers

Sussex free range supreme of chicken stuffed with spinach, pine nuts & goat’s cheese served on a crispy potato rosti cake with a lemon & white wine cream sauce & wild garlic oil dressed with crispy julienne leeks

English country garden trifle with apple jelly, Calvados custard, raspberry cake & strawberry cream served in individual kilner jars

Wild raspberry & pistachio crème mille feuille with Chambord liqueur ice cream & white chocolate tuile finished with edible petals & pistachio brittle

Rich dark chocolate & salted caramel tart with toasted hazelnut crumble & honeycomb ice cream finished with raspberry powder & edible petals
